What is green tea?
All true teas - white, green, oolong, black and pu-erh - are from the Camillia Sinensis plant. Green tea is produced when the leaves are very slightly oxidized which allows the leaves to retain a larger quantity of ECGCs than black or oolong tea.

What are ECGCs?
Epigallocatechin (ECGC) is one of several naturally occurring catechins found in Camillia Sinensis. The catechins are powerful anti-oxidants attributed to a variety of health benefits and ECGC appears to be one of the most powerful. All teas have ECGC, but the less oxidized leaves will have more ECGC retained. White and Green teas are oxidized very minimally. Oolong or Wu-long teas range in the oxidation from very light to dark, almost black Oolongs. Black tea is the most oxidized but all are from the same plant and its varietals.
